Haighton Manor is back – with a vengeance! The 17th century building has restored into a beautifully relaxing country pub, with fantastic food, lovely antique furnishings, original features and a warming period charm – helped by three log fires. New owners Brunning and Price, who run 55 pubs, spared no expense to remodel the interior and build a dining room. The pub caters for up to 170 diners but never feels crowded because of all its nooks and crannies – a tribute to the expertise of Brunning and Price, with Graham Price, one of the chain’s founders, acting as a consultant for the seven-month transformation. Manager Chris Humphries, 35, brims with enthusiasm and is a constant presence, living upstairs with his family. “We are a country pub at heart,” he says,  “but we put an awful lot of effort into our food.” The menu has pub staples such as fish and chips, sausages and mash, steak burger, cheese and onion pie, plus food from around the world such as South Indian spiced sea bass or a Thai curry. Ten dishes change every six weeks to keep the menu fresh – and a lot of thought goes into those dishes, with in-put from the entire team of seven chefs. There is an the extensive and affordable wine list – not to mention the 150 malt whiskies, 100 gins, two traditional ciders and half a dozen real ales. Delicious-sounding sandwiches and bites cater for light appetites. Chris, a keen cook and food lover, adds: “We love people to come for a drink, relax, read the paper and have a sandwich or they can have a meal – we have space for both.” Staff are “massively important” and Chris, who used to manage the Aspinall Arms at Mitton, has recruited “enagaging personalities who are attentive and friendly”. He adds: “Everything about this pub has worked –  the building is perfect for what we do. I stand here sometimes and think it’s like it was meant to be.”
